Sour Citrus & Feta Bruschetta

Yesterday, I taught a Girls’ Night Out class at Kitchen Conservatory. This was my favorite recipe of the night….

Sour Citrus & Feta Bruschetta


2 firm red or pink grapefruits

1 medium shallot, minced

1/2 teaspoon white wine vinegar

1/4 teaspoon yellow mustard seeds

1/2 teaspoon minced tarragon

1/2-inch-thick baguette slices, toasted

crumbled feta cheese

  • Cut the grapefruit in half & cut out the sections over a medium skillet.  Squeeze the juice from the fruit into the skillet as well.
  • Add the shallot, vinegar and mustard seeds. Cook over moderately high heat, stirring, until most of the juice has evaporated and the fruit has started to break down, about 2 minutes.
  • Let the grapefruit mixture to cool to room temperature (or chill until ready to use), then stir in the tarragon. Spread the relish over the toasted bread & top with some crumbled feta.
